Job Description

Position Summary
Primary responsibility for station assigned; maintains mise en place and prepares hot and cold foods for the restaurant according to Chefs specifications and for catered events as required.
 
Essential Duties & Responsibilities
• Set up station and mise en place to Chefs specifications.
• Cooks food to order.
• Set up, maintain, work and breakdown station and maintains area cleanliness throughout shift, cleans work area at shift end.
• Properly stores all mise en place at shift end.
• Submits production needs for following day by shift end.
• Advanced sauce knowledge, for example, demi glace.
• Be proficient in sauté, grill and roasting stations.
• Make Manager aware of guests’ comments and complaints.
• Report to work in a neatly groomed and acceptable manner as outlined in the employee handbook.
• Report to shift on time.
• Comply with all policies and procedures for the Food and Beverage Department, The Little Nell, and Aspen Skiing Company.
• Is familiar with hotel fire and safety procedures. Assist in emergency and security procedures as directed by management.
• Complete tasks and projects delegated by your manager and assist other departments as business volumes and staff levels demand.
• Knowledge of safe and sanitary work conditions and proper food storage. Be completely familiar with all emergency procedures, act responsibly and in accordance with policies and procedures in the event of an emergency.
• Answer all incoming calls and process then efficiently and accurately, adhering at all times to guidelines for telephone etiquette.
• Offer guest’s voice mail or written messages. Clearly write message for delivery to guest.
• Accept and place wake-up calls for guests in accordance with established procedures.
• Be completely familiar with all hotel services, hours of operations of Food & Beverage and retail outlets and key hotel and ski company personnel.
• After reservations has left for the day connect all calls to the Front Desk.
• Seasonally handle after hours calls for Aspen Skiing Company and the Snowmass Lodge and Club. Take messages for staff.
• Maintain on file updated lists of emergency numbers and home phone numbers of managers.
• Record all guest requests for Engineering and Housekeeping. Follow up to ensure request has been completed.
• Assist in stuffing envelopes or other related tasks for the hotel and accounting office.
• Be able to work Hotel Management System (LMS) computer. Know the software and run appropriate reports.
• Record and report all telephone maintenance and operational problems to Front Office Manager.
• Respond appropriately to alarm light on PBX console.
• Respond and communicate to specified departments in event of fire alarm activation.
 

Qualifications

• High School diploma or equivalent
• Culinary degree or equivalent           
• Two years of food preparation experience   
• Excellent written and spoken English

• Kneeling, bending, and standing, for extended periods
• Able to lift 50 pounds
• Work in hot and steamy environment
