Citizen Rail, a grill-centric restaurant and bar, is operated by Limelight Denver. Job Description

Summary 
The Prep Cook helps with station assignments, maintains place, and prepares hot and cold foods for the restaurant according to Chef’s specifications.

Essential Job Functions
•    Set up station and mise-en place to Chefs specifications
•    Cook food to order
•    Prepare cooking ingredients by washing and chopping vegetables, cutting meat etc.
•    Undertake basic cooking duties such as reducing sauces, parboiling food etc. 
•    Prepare simple dishes such as salads, entrees etc. 
•    May be involved in sauteing, grilling, and roasting stations
•    Help organize kitchen items including, dry goods, kitchen equipment, storage containers, cleaning supplies, and food deliveries
•    Set up, work, and breakdown station 
•    Maintain station cleanliness throughout shift and help washing dishes, sanitizing surfaces, taking out trash
•    Submit production needs for the following day by shift end
•    Other duties as assigned 

Qualifications

•    High School diploma or equivalent required 
•    Culinary degree or equivalent preferred
•    1 year of food preparation experience preferred
•    Simple sauce and dressing knowledge preferred 

Additional Information

Supervision Given and Received 
Given: This position has no supervisory responsibilities. 
Received: Works under direct supervision of the Executive Chef. Tasks are assigned according to specific procedures, and work is checked frequently. Instruction, advice and assistance are readily available.

Work Environment and Physical Demands 
Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods of time. Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces. Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance.
