Job Description

The Bartender will be an integral part of the Delmonico Steakhouse experience, combining exceptional beverage knowledge, polished service, and genuine New Orleans hospitality. You will craft and serve expertly prepared cocktails, wine, spirits, beer, and non-alcoholic beverages while creating memorable experiences for every guest. 

Responsibilities:

  • Consistently provide warm, polished, professional, and engaging service in accordance with Fairmont and Delmonico Steakhouse standards
  • Anticipate guests’ needs, respond promptly, and acknowledge every guest with genuine hospitality, regardless of how busy the outlet may be
  • Maintain complete knowledge of and comply with all departmental policies, service procedures, and Delmonico Steakhouse standards
  • Maintain complete knowledge of proper operation, maintenance, and safe use of all bar equipment and tools
  • Maintain a thorough knowledge of the Delmonico Steakhouse menu, including signature dishes, premium cuts of beef, ingredients, preparation methods, and appropriate beverage pairings 
  • Maintain extensive knowledge of all spirits, premium liquor brands, beer, cocktails, non-alcoholic selections, and specialty beverages offered in the restaurant
  • Demonstrate comprehensive knowledge of the wine and champagne program, including varietals, regions, producers, tasting characteristics, and appropriate food pairings 
  • Possess a strong understanding of classic and contemporary cocktail techniques, including proper preparation, presentation, glassware, garnishes, and service
  • Prepare all cocktails and beverages according to established Delmonico Steakhouse recipes and specifications while maintaining consistency and quality 
  • Demonstrate knowledge of New Orleans cocktail culture and the culinary philosophy that inspires the Delmonico Steakhouse beverage program 
  • Recommend cocktails, wines, spirits, and other beverages based on guests’ preferences and menu selections
  • Open and properly present and serve wine and champagne, demonstrating confidence with proper bottle presentation and service
  • Prepare and serve espresso, cappuccino, coffee, and other specialty beverages as required
  • Retrieve and serve food orders from the kitchen when applicable, ensuring proper presentation and timing 
  • Maintain positive guest relations at all times and address guest questions, concerns, or complaints promptly and professionally 
  • Resolve guest concerns with discretion and appropriate judgment, involving leadership when necessary to ensure guest satisfaction
  • Maintain complete knowledge of the restaurant’s table, seat, and station numbers, capacity, hours of operation, menu offerings, price ranges, and dress code
  • Maintain familiarity with Fairmont New Orleans services, amenities, outlets, events, and local attractions to accurately respond to guest inquiries
  • Maintain a clean, organized, and polished bar top, tables, service areas, and overall outlet throughout the shift 
  • Follow all food safety, sanitation, responsible alcohol service, and workplace safety standards
  • Strictly adhere to applicable Louisiana alcohol regulations, including regulations regarding service to minors and intoxicated guests
  • Present guest checks and accurately process cash, credit card, and other forms of payment in accordance with established cash-handling procedures
  • Maintain accuracy when processing transactions and reconciling checks, tips, and cash
  • Clean and reset the bar top, tables, and guest areas immediately following guest departure 
  • Properly clean and maintain glassware using the glasswasher or three-compartment sink 
  • Work collaboratively with Servers, Culinary, Stewarding, and other Food & Beverage colleagues to ensure seamless service and an exceptional guest experience 

Opening Responsibilities:

  • Inspect and verify the quality and quantity of all bar stock and supplies using the designated checklist
  • Complete opening inventory accurately 
  • Requisition and retrieve all necessary supplies from designated storage areas
  • Stock ice and ensure appropriate temperatures are maintained in refrigeration units and glasswash equipment
  • Set up liquor bottles, premium spirits, wines, and other products in the designated display areas and speed rail 
  • Prepare and organize all required cocktail garnishes
  • Stock appropriate glassware, bar tools, paper products, and service supplies
  • Prepare house-made mixes and other beverage components according to established recipes and standards
  • Inspect the condition, cleanliness, and functionality of blenders, shakers, jiggers, strainers, bar tools, and other equipment 
  • Prepare and present approved bar snacks and accompaniments as required 
  • Ensure the bar is fully stocked, organized, and presentation-ready prior to opening

Closing Responsibilities:

  • Properly store all reusable products and beverage components
  • Empty and drain ice bins and clean and sanitize sinks
  • Remove all items from the bar top and tables, return service items to their designated locations, and thoroughly clean all surfaces
  • Secure liquor, beer, wine, coolers, cabinets, and storage areas in accordance with hotel procedures
  • Remove liquor and bottles from the speed rail and designated display areas as required 
  • Wipe down bottles, shelving, bar surfaces, and other equipment
  • Thoroughly clean and sanitize all bar equipment and tools 
  • Remove trash and ensure the bar and surrounding service areas are properly maintained. 
  • Complete end-of-shift inventory and documentation accurately
  • Count empty bottles by type and complete all required requisition, transfer, and spill documentation
  • Ensure the bar is fully prepared and organized for the following shift

Qualifications

  • High school diploma or equivalent vocational training certificate. 
  • Minimum 18 years of age and legally permitted to serve alcoholic beverages. 
  • Minimum two years of bartending experience required; experience in a luxury, upscale, fine-dining, or high-volume steakhouse environment preferred. 
  • Strong knowledge of cocktails, spirits, wine, champagne, beer, and non-alcoholic beverages. 
  • Previous experience with premium spirits and wine service strongly preferred. 
  • Passion for hospitality, mixology, wine, spirits, and creating memorable guest experiences. 
  • Strong understanding of classic cocktail techniques and beverage presentation. 
  • Excellent verbal and non-verbal communication skills; fluency in English required. 
  • Strong interpersonal and problem-solving skills with the ability to interact confidently with a diverse clientele. 
  • Previous cash-handling and POS experience required. 
  • Ability to accurately input and access information using point-of-sale systems and hotel technology. 
  • Previous Micros or comparable POS experience is an asset; training will be provided. 
  • Current alcohol awareness certification required. 
  • Current food handler certification required. 
  • TABC certification preferred or ability to obtain required certifications. 
  • CPR certification is an asset. 
  • Ability to perform basic mathematical calculations accurately. 
  • Highly responsible, dependable, and detail-oriented. 
  • Ability to remain composed and professional in a fast-paced, high-volume environment. 
  • Ability to work effectively as part of a team while independently managing assigned responsibilities. 
  • Must be available to work flexible hours, including evenings, weekends, holidays, and special events.
