Job Description

Reporting to the F&B Manager, responsibilities and essential job functions include but are not limited to the following: 

  • Organize and conduct daily pre-shift meetings communicating pertinent information to the colleagues.
  • Schedule and direct staff in their work assignments.
  • Train and direct staff in all food and beverage operations according to Fairmont Standard. Communicate effectively, both verbally and in writing, to provide clear direction to staff.
  • Observe colleague performance, praise as well as encourage improvement when necessary, with effective and consistent performance management.
  • Maintain proper inventory levels of wines, other beverages and supplies.
  • Set-up and train employees on wine and beverage service and knowledge.
  • Enforce proper beverage service standards during service.
  • Assist in developing and implementing cost saving and profit enhancing measures.
  • Assist in creating beverage promotions and recommend price adjustments based on market trends, quarterly competitive analysis and product sales mix.
  • Conformance to Fairmont standards of dress and personal appearance is required.
  • Interact positively with customers, promoting hotel facilities and services.
  • Resolve problems to the satisfaction of involved parties.
  • Continuously move throughout the restaurant and kitchen areas to visually monitor and take action to ensure food and beverage quality and service standards are met.
  • Carefully handle customer complaints by conducting thorough research of the situation in order to choose the most effective solution.
  • Utilize prescribed cash handling procedures to accurately charge customers, create forecast and revenue reports and write correspondence.

Qualifications

  • Proven experience as a Food & Beverage Supervisor or in a similar leadership role
  • Strong leadership and communication skills with the ability to motivate team members
  • Excellent problem-solving abilities and meticulous attention to detail
  • In-depth knowledge of food safety regulations and industry best practices
  • Proficiency in inventory management, cost control, and POS systems
  • Flexibility to work various shifts, including early mornings, late evenings, and weekends
  • Passion for delivering exceptional guest experiences with a positive, customer-first mindset
  • Fluency in English 
  • Understanding of local cuisine, cultural preferences, and customs in Kenya
  • Ability to thrive in a fast-paced, dynamic environment
  • Strong organizational and time management skills
  • Proficiency in Microsoft Office suite and hospitality management software
