Job Description

Step into a key leadership role at Pullman East Melbourne, overseeing the bar experience for Cliveden Bar and Sanctum. As Bar Manager, you will own the creative direction of the cocktail and beverage program, lead and develop a passionate bar team, and deliver a premium guest experience in two of East Melbourne’s most vibrant hotel bars. This role offers genuine autonomy, a high‑profile platform during major Melbourne events, and strong support from an experienced Food & Beverage leadership team to bring your ideas to life.

What you’ll be doing

  • Leading daily bar operations across Cliveden Bar and Sanctum, ensuring elevated, efficient and engaging service.

  • Designing and evolving a market‑relevant beverage offering, including cocktails, wine, beer and spirits.

  • Coaching, rostering and developing the bar team to deliver consistent standards and a great team culture.

  • Managing stock, costing and supplier relationships to optimise profitability and minimise waste.

  • Acting as a visible host, building rapport with guests and maximising revenue during key trading periods and events.

 

Qualifications

The ideal candidate will possess the following skills and experience (but not limited to):

  • Previous experience as an F&B Supervisor, Assistant Manager or Duty Manager in a 4–5-star hotel or high‑volume bar environment.​
  • Proven experience leading a team during busy service periods, with strong floor presence and confidence in managing guest issues.​
  • Current Victorian RSA and working rights in Australia; additional food safety certification is highly regarded.​
  • Strong product knowledge across wine, cocktails and contemporary dining, with the ability to train others and support upselling.​
  • Demonstrated understanding of OH&S, food safety and RSA obligations in a hotel environment.​
  • Competent with POS systems and basic Microsoft Office; exposure to hotel PMS and events systems is an advantage.​
  • Availability to work a rotating roster including mornings, evenings, weekends, public holidays and major event days at the MCG.​
  • Excellent communication and interpersonal skills, with a calm, solutions‑focused approach under pressure.​
  • Impeccable grooming and professional presentation aligned with Pullman standards.
