• Mastery in Japanese culinary techniques, including:
  • Teppanyaki & Hot Japanese cuisine preparation
  • Knife skills and meat/fish handling
  • Hot kitchen specialties (tempura, robatayaki, teppanyaki, donburi, etc.)
• Strong knowledge of Japanese ingredients, seasonality, and authenticity standards
• Menu engineering, costing, and kitchen financial control
