Job Description
- Oversee a dedicated section of the kitchen, executing the preparation and flawless presentation of refined, high-end dishes with consistency in taste, texture, and artistry
- Support the Executive and Sous Chefs in the design and execution of seasonal menus and bespoke dining experiences
- Maintain strict portion and cost control standards while minimising waste and upholding a superior culinary offering
- Supervise and coordinate the brigade for both buffet and a-la-carte style during service, ensuring smooth and timely execution — particularly in the absence of senior chefs
- Mentor apprentices and commis chefs, fostering a culture of learning, excellence, and continuous development
- Collaborate seamlessly with front-of-house teams, clearly communicating menu changes, special requests, and service timing
- Uphold the highest standards of hygiene, sanitation, and food safety in accordance with HACCP guidelines and luxury hotel protocols
- Maintain pristine cleanliness and organisation across your section and all kitchen equipment
- Contribute to a respectful, inclusive, and passionate kitchen environment that reflects Accor's world-class hospitality values
Qualifications
- Certificate III in Commercial Cookery
- Proven experience in a 5-star or luxury hotel kitchen environment
- Strong technical cookery skills with the ability to execute high-end cuisine to a consistent standard
- Solid understanding of classic and contemporary culinary techniques aligned with the Sofitel brand
- Demonstrated leadership ability with the poise and composure to perform under pressure
- Ability to supervise, coordinate, and set a professional example for junior team members at all times
- Excellent organisational skills with the capacity to manage multiple responsibilities efficiently during service
- Flexibility to work varying hours, evenings, weekends, and public holidays as required by the outlet
