Job Description

The Sous Chef – Italian Cuisine supports the Executive Chef in overseeing daily kitchen operations with a focus on authentic and contemporary Italian dishes. Responsible for maintaining high food quality, consistency, and presentation standards in line with Palace policies.

Key Responsibilities:

  • Supervise preparation of Italian cuisine.

  • Ensure food quality, hygiene (HACCP), and portion control standards.

  • Assist in menu planning, costing, and inventory management.

  • Train and supervise junior culinary colleagues.

  • Maintain cleanliness, safety, and smooth kitchen operations during service.

Qualifications

  • Culinary diploma/degree.

  • 4–6 years’ experience in Italian cuisine within a hotel or fine-dining restaurant.

  • Strong knowledge of Italian ingredients and cooking techniques.

  • Leadership skills and ability to work in a fast-paced environment.
