We are looking for experienced Senior Sous Chefs to join the Mondrian team at LiTO!
THE ROLE
Assist the Executive Chef/Head Chef in the preparation, costing and design of all food menus.
Supervision of kitchen in the absence of the Executive Chef/Head Chef. Delegate duties and responsibilities to culinary team to ensure service demands are met.
Ensure the highest possible standard of hygiene is practiced and maintained by the entire culinary team to meet Health & Safety regulations and HACCP food preparation guidelines.
Liaise with Food and Beverage team members regarding the availability of menu items, additions to the menu and any relevant changes.
Be available to assist guests with requests and handle all complaints promptly and efficiently as required, ensuring follow-up to determine the source of the complaint and resolution of the problem.
THE REQUIREMENTS
Demonstrated experience in a senior role leading a commercial or restaurant kitchen
Previous supervisory, leadership and training experience
Sound computer literacy with experience using online ordering systems and Microsoft Office Suite
A strong working knowledge of HACCP and food handling requirements
Previous exposure to high volume restaurants or event spaces
Ability to work various shifts including evenings, weekends and public holidays
