The 25hours Hotel The Olympia is the first 25hours in Australia, located in the vibrant suburb of Paddington in Sydney. The building itself was formerly a popular cinema, which opened in 1911 and reflects its rich history throughout the guest experience.
The hotel has 109 rooms on six floors and will feature event and meeting areas, a Levantine restaurant, a street café, and a rooftop bar with a view of the Sydney City Skyline. A new era awaits at the 25hours Hotel The Olympia which will shape and transform Paddington, welcoming a vibrant and diverse team, bringing its vision to life.

Together with our General Manager, the Executive Chef is responsible for ensuring the seamless operation of our culinary offerings, delivering a memorable dining experience, and elevating our food and beverage program across the hotel. You will be the culinary mastermind behind every dish, leading and mentoring the team to ensure consistency, quality, and creativity. - think outside the box and create bold, innovative concepts for our food, beverage, and dining operations. From pop-up events to signature dishes, you’ll keep things fresh, exciting, and ever-evolving.
- Captivate and inspire the culinary team with your deep understanding of our brand concept, helping to roll out our culinary SOPs and ensuring every dish reflects the vibrant spirit of our hotel.
- Lead by example and foster a “come as you are” mentality within your team, hiring, mentoring, and empowering a diverse group of chefs and kitchen staff to reach their full potential.
- Own the culinary P&L, understanding what drives your kitchen’s success. You’ll continuously monitor and adjust operations to meet financial targets while maintaining top-notch quality.
- Understand your guests and team – hotel guests, chefs, food & beverage staff, and back-of-house teams are all part of our experience, and you’ll ensure everyone is set up to create unforgettable memories.
- Bring your bold ideas to life through collaborations and partnerships. Work with local suppliers, art scenes, and the community to create unique culinary experiences that amplify our brand and excite our guests.
- As the Executive Chef, you’ll work closely with the Director of Operations and the entire hotel team to maintain a positive, energetic environment where creativity thrives, ensuring smooth operations and exceptional results.
Qualifications
We are looking for you – with personality and that certain something:
- Experience in pre-opening roles is a bonus, with a solid understanding of OS&E operations, design, kitchen fit-out, equipment testing, and more.
- A strong food & beverage background in a lifestyle hotel or high-end restaurant chain, or a similar hospitality-focused culinary environment, would be advantageous.
- Proven experience managing large-scale kitchen operations, both in the front of house and in the kitchen, with an ability to maintain consistency and quality across all levels.
- A deep passion for food, beverage, and an understanding of Sydney’s dynamic culinary and nightlife scene is essential.
- Your leadership style is one that combines innovation with empathy, ensuring your team feels empowered to bring their best ideas to the table while also working cohesively to meet operational goals.
