Job Description
Scope and Objectives
You have to assist the Restaurant General Manager in optimizing sales and productivity, through continuous development of the outlet’s wine program. Fully responsible for the wine education of the food and beverage service employees, sourcing the wines according to our guests’ demand and the control of the stocks in the outlet.
The Sommelier should be at all times a team player, able to carry out administrative duties and to help the team leaders in supervising the line colleagues at the outlet.

Key Deliverables and Responsibilities
Ensure that restaurant team have good knowledge of wine and food
Control on a daily basis the proper storage, aging rotation, and temperature of all stock in the outlet wine cellar and report any problems and malfunctions
Ensures all beverage equipment and wine lists are clean and updated with correct vintage and out of stock items
Liaises with the Purchaing department to ensure efficient ordering and stock levels during high and low seasons (have proper inventory system in place for the cellar and review receiving / ordering procedures)
Performs any other reasonable duties as required by the Restaurant General Manager
Ensure correct grooming standards are followed at all times
Follow the Care Programme at all times
Follow up on all financials, LQA, Forbes and TrustYou targets
Is aware of the daily and monthly financial targets (especially beverage)
Actively contributes towards the achievement of financial targets
Keep manager on duty updated of any guest feedback so they can update the Glitch Report
Completes the relevant opening and closing checklists
Maintains the HACCP & FIFO standards as required by the regional governing body
Handle financial procedures according to guidelines set by the finance department
Assume the responsibility of daily wine operations
Attends daily briefings prior to commencement of shift
Ensure all appropriate equipment is on hand for each service period
Should be creative, confident and prepared to think outside of the box
Following the personal development plan set by the Restaurant General Manager
Ensure the operational inventory is always accounted for and in immaculate condition
Create opportunities for upselling products
Follow Hotel Evacuation Policy in case of an Emergency
Ensure awareness and delivers the optimum levels of service and guest satisfaction
Conducts in weekly wine inventory
Prepares wine requisitions accordingly
Flexible to work in other areas when required by the immediate Supervisor.
Records and submits all inventory transfer records
Record any wastage, breakage or lose
Prepares the relevant mise en place for all wine related requirements
Picks up and stores all the wine related inventory
