Job Description
The Sushi Chef is responsible for preparing high-quality sushi and Japanese-inspired dishes while ensuring exceptional presentation, taste, and consistency. This role contributes to guest satisfaction by delivering authentic culinary experiences in line with the restaurant’s standards and hygiene regulations.
Key Responsibilities
- Prepare sushi, sashimi, rolls, and other Japanese dishes according to established recipes and standards.
- Ensure the freshness, quality, and proper storage of fish and ingredients.
- Maintain high standards of food presentation and portion control.
- Follow food safety, hygiene, and sanitation regulations at all times.
- Manage workstation cleanliness and organization.
- Assist with menu development and suggest new sushi items or specials.
- Control food waste and support stock management.
- Work closely with kitchen and service teams to ensure smooth operations.
- Train and support junior kitchen staff when required.
- Comply with company policies and health & safety procedures.
Qualifications
- Proven experience as a Sushi Chef in a restaurant or hotel environment.
- Strong knowledge of sushi techniques, knife skills, and Japanese cuisine.
- Attention to detail and passion for culinary excellence.
- Ability to work efficiently in a fast-paced environment.
- Team-oriented attitude with good communication skills.
- Flexibility to work shifts, weekends, and holidays.
- Culinary certification or training is an advantage.
